Taco Soup


My Mom was born on Halloween - a pretty fun birthday, if you ask her!  She loved it.  It was always a party!  Unfortunately, her kids didn't always remember it was her birthday, as they were always hopped up on sugar, worried about their costumes, and excited to get out trick or treating...
But, almost every year all of her close friends would come to our house and while one or two parents took everyone trick-or-treating, the rest of the adults would stay and celebrate her birthday.
Huge gatherings were my mom's thing.  She loved having lots of people around.  And since trick-or-treating inevitably started around dinner time, she was often faced with a huge group of people to feed - which she also loved.
Almost every year, Taco Soup was on the menu.  And now, it is pretty much a part of Halloween for me.  The perfect, warm, savory meal to combat against all the cold and sugar.

Here is my favorite

Taco Soup Recipe

1 1/2 lb. lean ground beef
1 lg. can Campbell's Vegetable Soup (ABC Soup)
1/2 of the above can of water
1 can pinto beans
1 can kidney beans
1 can red beans
2 sm. cans sliced olives
1 sm. jar salsa
1 lg. can tomatoes (or qt. of tomatoes)
1 pkg. taco seasoning
1 can corn

Just brown the meat, drain any fat, then add in all the rest of the ingredients and let it heat up.
This makes a ton of soup!  So, use a big pot.  Our favorite way to serve it is to sprinkle some grated cheese on top, add a dollop of sour cream, and throw in some Frito's for a nice crunch.  Enjoy!
